This is a recipe I stumbled across many years ago. It's an iced tea drink with a twist - halfway between a chai and orangina. Perfect for hot weather days, this recipe also puts some of those pot pourri spices mouldering on the spice rack to good use.
1/2 c sugar
1c water
1 stick cinnamon
6 cloves
3 cardamom pods
2T tea leaves
4c boiling water
Juice of 1 large lemon and 2 oranges
Ice cubes and soda water to serve
Boil 1c water, sugar and spices for 5 minutes then remove from heat. Brew tea in a large pot and leave to stand for 5 minutes. Strain into large bowl with spice mixture and leave to cool. Stir in orange and lemon juice. Serve with ice cubes and diluted to taste with soda/mineral water.
